How To Brew Oolong Tea

How to Brew Your Tea:

1.  Pour hot water into the clay teapot to warm it. remember you need 2 pots, one for brewing and one for serving.

2.  Take the brewing pot and place enough tea in it to cover the bottom, then pour hot water over leaves, so that they are fully covered.

3.  Take some hot water and swirl it around and then discard it. This is called washing the tea leaves – and it opens to the leaves and washes away any residue which might be on the leaves.

4.  Fill the pot to the top, with hot water. Let it infuse for 15 – 20 seconds, then pour from the brewing pot into the serving pot and serve the tea.

5.  When the serving pot is almost empty, boil the water again and pour it over the leaves. You can do this process three – five times with the same leaves. Increase the infusion time with each successive brew.

Note: If you are using a brand new, unused pot you will first need to allow it to ‘cure’. Follow steps 1 -5, then allow the leaves to stay in the pot until the next morning, or for 24 hours, as this will allow the aroma to enter the teapot.

Avoid brewing other types of teas in your pot and never use detergents to wash your teapot – hot water is sufficient.
